Creamy buckwheat with mushrooms
Buckwheat cooked like a risotto - cream, mushrooms, and cheese melted over the top.
I am Slavic, and this is my table. Buckwheat, twarog, rye bread, cabbage, beetroot, soured cream on most things - the ingredients I grew up eating, cooked the way I cook now. Sometimes that means a dish exactly as it should be. More often it means a combination nobody would call traditional, because I am not trying to preserve anything. I also cook my way around the rest of Eastern Europe, learning food that was never mine to begin with. Not every Slavic person will recognise what I do here, and that is rather the point - it is my perspective, not a definition.
